A special and unique recipe thanks to the use of fava beans. The addition of the Sassone’s Summer Black Truffle will best enhance the flavourful taste of the fava beans.

Ingredients for 5 people
500g Sassone’s truffle gnocchi
1 kg of fresh fava beans
3 spring onions
30 g of Sassone’s Summer Black Truffle
100g guanciale
Instructions
Let’s grind the fava beans and set them aside. Remove the spring onions and place them in a saucepan with a drizzle of oil. Once golden, place the fresh broad beans and a cup of water. Cook for 20 minutes. Once cooked, blend the beans creating a cream. Now we throw the dumpling in the water that we had boiled with very little salt. Once they are afloat, they are ready to be drained and poured into the pot with the cream with no flame; stir to mix. We flatten and finish with flakes of Sassone’s Summer Black Truffle. To make the dish tastier, we can cut and stir the guanciale into strips to give the dish a hint of crunchiness.
