Ingredients
- 3 big potatoes
- 20 gr of Sassone ”Summer” Black Truffle
- 20 gr of Milk
- 20gr of grated cheese
- Salt and pepper to taste
- Parsely to taste
- Breadcrumbs for covering
For the cream
- 200gr of fresh cream
- 100 gr of grated cheese
- 50 gr of butter
Procedure
Once the potatoes are boiled, crush them and combine oil, salt, parmesan, black pepper and an egg. Mix everything with your hands until it is smooth. In a bowl, put an oil base and cover the base with breadcrumbs where we will lay our potato mixture. Bake for 20 minutes until golden brown.
In a pot combine the cream at room temperature, the butter and the grated cheese and bring it to a boil. The result will be a light cream and not too firm. Let’s bake the flan and serve. Pour the cream obtained on top to make the flan even tastier. Finish the dish with flakes of Sassone ”Summer” Black Truffle.
We can make the dish even more summery and fresh by using another type of cream, for example with a cream based on zucchini and basil.
