Description

The fresh Bianchetto Truffle (Tuber albidum Pico or Tuber borchii Vittad.)is harvested from January 15th to April 30th.

It has a pleasant, intense, slightly spicy and garlicky aroma, ideal for those who love strong aromas in cooking. It is highly appreciated in butter and cheese dishes.

Appearance

Bianchetto resembles the White Truffle but the two types of truffles differ in some essential elements.
Outwardly their shape is very similar: irregular with protuberances smooth to the touch, but the color of the Bianchetto is much darker than that of the White Truffle. The color of the mature Bianchetto truffle is dark gold, bronze and sometimes even light brown; the gleba and the ripening veins are also dark.
Its dimensions are generally small, ranging from those of a hazelnut to those of a chicken egg.

Where It Grows

The Bianchetto truffle grows on calcareous soils in the deciduous and coniferous woods, there are significant quantities in Calabria, Basilicata and Puglia.
