2 g olio di coriandolo

295 g of rise flour

10 g of yeast

40 g of extra virgin olive oil

100 g of almond flour

25 g of flax flour

280 ml of water



Put the flours , the oils and the salt in the pasta maker and start to mix . Successively put the water and the yeast, going on to knead for some minute. You should obtain a creamy and homegenized mixture. So, you have to put the mixture in a baking tray using a rolling pin; you should obtain a fillo dough very thin , successively you create little holes using the fork, you put the oil to grease the fillo dough and then put curing salt on it. At this point you put it in the oven at 185 degrees for 12 minutes. When crackers are cooked you allow to cool  them and you fill it with cream cheese, misticanza ? And salmon . Finally you grate the raw truffle on it.
