Green Ice Cream Ball with Sassone’s Summer Black Truffle


Ice cream is the quintessential food of the summer: simple and that has no need for further additions. For this tasty ice cream only a few ingredients are needed: cream, sugar, grated cheese and basil. Creamy, tasty and delicious, a versatile dish that allows us to propose unusual combinations. We present you a green ice cream ball made unique thanks to the unmistakable flavor and aroma of the Sassone’s Summer Black Truffle. Tip: to reduce the sweetness and propose our sphere not only as a dessert but also as an appetizer we can use less sugar or replace it with a cane sugar.


  • 500 ml of cream for desserts

  • 120 g sugar/raw cane sugar

  • 120g grated cheese

  • 5 basil leaves

  • Sassone Black Summer Truffle


We start to heat the cream and sugar in a saucepan and bring to a boil, stirring often.
Turn off the hear and add the grated cheese and continue stirring until the cheese is completely melted and amalgamated.
Let the mixture cool completely and add the basil leaves. Blend all the mixture and pour into the ice cream maker for as long as necessary. Finally, we add some lamella of Sassone’s Summer Black Truffle.
