Spumoso with Black Truffle and Artichokes

Here is an original recipe that will satisfy your diners with every sense. The natural color combination and unusual shapes that will be created while baking the eggs in the oven will amaze everyone. Very few ingredients for a unique dish. Here is our Spumoso.

Preparation time: 20 minutes

Ingredients:

  • 4 fresh eggs

  • 1 artichoke

  • salt to taste

  • pepper to taste

  • Sassone Black Truffle to taste

Instructions

We open the eggs by separating the whites from the yolks. It is important to store egg yolks in separate bowls or glasses, and it is also essential that they remain absolutely intact.

Instead, pour all the egg whites into one bowl and add a pinch of salt; now whip them until stiff.

Let’s take a baking sheet and line it with baking paper. Using a spoon, we form four clouds on the baking sheet with the whipped egg whites. And with the back of the same spoon, we carve out a small space in the center of each cloud, a kind of nest that should accommodate the yolk. Very carefully lay the yolks gently into each of the nests created with the spoon.
We lightly salt the egg whites and sprinkle a pinch of pepper over the yolks.

Place in preheated oven at 180 degrees and bake for five minutes.

During the cooking time, we clean the artichoke by cutting it thinly and season it with oil and salt.

Once our spumoso is cooked, let’s arrange it on a plate, add our artichoke, and top it with the gills of our fresh Saxon black truffle.

Tips

It is recommended to consume this dish as soon as it is ready, also a secret to ensure that the artichoke does not oxidize in contact with air remember to soak it for a while in water and lemon before cutting it.
